Can you only process chickens in this facility?
Our HACCP plan allows for any poultry. We processed chickens, ducks, geese, and turkey while in operation.
How many birds can you process in a day?
The production day depends greatly on many factors. One main factor is the type of bird you are processing. Some birds come cleaner faster than others. Another factor is the experience of your staff. After 2 1/2 years our staff got very efficient. Our direct market supported between 100- 200 birds per day.
How much can the racks hold?
The drying racks are custom made. One rack can hold 100 birds, the other can hold 120.
Do the birds need to be frozen or can they be fresh?
The birds can be either frozen or chilled to meet the market's demand.
How are the birds packaged?
Inside the plant is a vacuum packer and a turkey fryer we used to shrink wrap.
Is there a scale on site?
There is a certified label printing scale on site.
How many employees does it take to run the plant?
We typically ran with 6-8 employees.
Can the plant run off of a generator or does it need electrical hook-ups?
The whole plant can be supported off of a 9000 watt generator. It is also equipped with a 220 electoral hook-up.
What is involved with disposing the waste?
The waste needs to be hooked into an approved sewage system. To be a mobile facility, or, if direct access is not available, we used 250 gallon containers to store the sewage until it could be disposed of properly.
Does a HACCP employee need to be on site during processing?
To be a USDA Federally Inspected Plant, A HACCP trained employee must be in the facility during operation.
